Instructions

  1. Bring a large pot of heavily salted water to a boil. Add pasta and cook until al dente, according to package directions. Reserve 1 cup pasta water before draining the pasta.
  2. While the pasta cooks, make the sauce: To a high-powered blender, add the tomato sauce and cottage cheese. Blend on high until smooth. Set aside.
  3. In a large, deep skillet or braiser, melt the butter over medium-low heat. Add the minced garlic and cook, stirring, for 1 minute. Add the tomato paste and red pepper flakes and cook, stirring, for 30 seconds. Turn the heat to low, then stir in the vodka and cook for 2 minutes.
