Spinach & Ricotta Stuffed Shells

Tender pasta shells filled with creamy ricotta, mascarpone, spinach, and Parmigiano are nestled into our Martone Street Pomodoro Sauce and baked until golden, bubbling, and full of flavor. It’s rustic, comforting, and made for gathering around the table with the people you love. Sometimes the most memorable meals are the ones that feel like they’ve been passed down for generations.

Serves 10-12

Ingredients

  • 1 12-ounce box of jumbo conchiglie rigate pasta
  • 16 ounces whole-milk ricotta
  • 8 ounces mascarpone cheese, room temperature
  • 1 large egg
  • ½ cup baby spinach, blanched, squeezed, and roughly chopped
  • 1 ¼ cup grated Parmigiano, divided
  • 8 ounces shredded whole milk mozzarella, divided
  • 1 teaspoon kosher salt
  • Black pepper to taste
  • 1 (24-ounce) jar Martone Street Pomodoro Sauce
  • 2 tablespoons chopped fresh basil to garnish

Instructions

  1. Preheat the oven to 425 degrees. 
  2. Bring a large stock pot of salted water to a boil. Cook the pasta to al dente, according to the package directions. Transfer the jumbo shells to ice water to stop the cooking, then spread them out on a parchment-lined sheet tray.
  3. In a food processor, combine the ricotta and mascarpone, then pulse for about 30 seconds to aerate. Add the egg and pulse to incorporate. Transfer the mixture to a medium mixing bowl, then stir in the spinach, ¾ cup of the Parmigiano, half of the mozzarella, salt, and black pepper. 
  4. Using a spoon or a piping bag, fill each shell until all of the mixture is used. 
  5. Evenly pour ¾ of the sauce into a 9x13-inch baking dish, line up the stuffed shells, then top with the remaining Parmigiano and mozzarella.  
  6. Cover the dish tightly with foil, then bake for about 20 minutes until bubbly. Remove the foil and bake for an additional 5-10 minutes until golden. Top with chopped basil.
