Spaghetti Puttanesca

Puttanesca is proof that a handful of bold pantry ingredients can create something truly unforgettable. Briny Kalamata olives, capers, garlic, and a touch of white wine come together with Martone Street Mediterranean Style Sauce to build a pasta that's vibrant, savory, and deeply satisfying. Finished with fresh basil and tossed with perfectly cooked spaghetti, it's a weeknight classic that tastes like it simmered all afternoon—simple, spirited, and full of character.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, sliced thinly
  • Pinch crushed red pepper flakes
  • 3 ounces white wine
  • 6 tablespoons capers, drained
  • 1 (6-ounce) jar Kalamata olives, drained and sliced in half lengthwise
  • 1 (24-ounce) jar Martone Street Mediterranean Style Sauce
  • 1 pound spaghetti 
  • 10 basil leaves, chopped

Instructions

  1. Bring a large pot of water to a boil and salt it generously (it should taste like broth). Cook the spaghetti until it's about ¾ of the way done. Reserve ½ cup of pasta water, then drain the pasta.
  2. In a large saucepan, heat the olive oil over medium-low heat. Add the sliced garlic and crushed red pepper flakes and sauté until fragrant, about 30 seconds.
  3. Deglaze with the white wine and reduce for about 4-5 minutes, so the alcohol cooks off. Add the capers and olives and stir to combine. Pour in the sauce and simmer on low for about 8-10 minutes.
  4. Cook the spaghetti until it's about ¾ of the way done. Reserve ½ cup of pasta water, then drain the pasta.
  5. Transfer the pasta directly into the puttanesca sauce and toss to coat, adding pasta water as needed to thin the sauce. Add the chopped basil, taste, and adjust salt as needed.
