Spicy Sausage & Peppers

There’s something timeless about Sausage & Peppers. It’s the kind of dish that brings us back to the Italian-American tables from childhood—simple ingredients, bold flavors, and the kind of cooking that’s meant to be shared. Here, spicy Italian sausage, sweet peppers, and onions come together with our Martone Street Mediterranean Sauce for a dish that’s rustic and soulful. A little heat from Calabrian chilies, a touch of oregano, and some good crusty bread to catch every drop of sauce—that’s all you need for a meal that feels like home.

Serves 4

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 pound spicy Italian sausage links (or can substitute sweet)
  • 3 bell peppers, sliced into chunks (red, orange, yellow)
  • 2 purple onions, sliced thinly end to end
  • Kosher salt
  • ¼ teaspoon crushed red pepper flakes
  • 2 tablespoons Calabrian chili peppers, chopped finely 
  • ½ cup chicken stock 
  • 2 tablespoons red wine vinegar 
  • 1 (24-ounce) jar Martone Street Mediterranean Sauce
  • 1 tablespoon fresh oregano, chopped

Instructions

  1. Heat the olive oil in a large sauté pan over medium-high heat. Add the sausage links and sear on all sides until deeply browned. Transfer the links to a plate to cool slightly.
  2. In the same pan, add the sliced bell peppers and purple onions. Season with a pinch of salt and cook until they begin to soften and take on a bit of color. 
  3. Stir in the crushed red pepper flakes and the finely chopped Calabrian chili peppers.
  4. Pour in the chicken stock, scraping up the browned bits from the bottom of the pan. Simmer for 2–3 minutes.
  5. Add the red wine vinegar and cook for 1 minute to let it reduce slightly.
  6. Stir in the sauce, lower the heat, and let it all simmer gently for 10–12 minutes, until the peppers are tender.
  7. Cut the seared sausage links into thick chunks, then return them to the pan with the peppers and sauce.
  8. Stir in the fresh oregano. Taste and adjust seasoning before serving with crusty bread.
